Food to grab on the go -for a trip to the beach

I thought I'd share what we did today , it's going cold which makes people want to stay indoors snuggled up , but I have the opposite opinion ! 

Last night before bed, I checked the weather and noticed it was going to be nice , great autumn weather is one of my favourite things - simple things are the best in my world.  

Before falling asleep I was wracking my brains of what to take for a picnic as everything we had in was time consuming or fresh veg for a cooked dinner- one can't really eat a cold roast on the go really. 

6 different veg , chopped & grilled in coconut oil & mixed with 2 different types of Cous Cous . (Recipe Below)

I just put everything in a bag & go these days , making sure we have enough reusable plates.

I think the most important thing when heading out for the day is to make sure you have enough snacky bits for the boys. We always have Nakd Bars and Nakd Raisins in the glove box, along with bottles of Evian water in the boot, and sometimes rice cakes.

I'm not a big snacker anymore, but i do enjoy Nakd bars! They are addictive. For lunch on the go however we normally take salad with a side of protein, but yesterday I decided to do cous cous and houmous with roasted veg.

Easy as an be Cous Cous:

Heat 3 tablespoons of coconut oil in a pan. 

Chop : 2 bell peppers, 2 onions, 1/2 a aubergine , 1/4 of a butternut squash, 2 courgettes , 2 carrots and add salt & pepper to taste.

Stir into the hot oil.

While the veg is simmering, measure 2 cups of plain cous cous (should be enough to feed 2-3 people)

Add 1 teaspoon paprika, 1/2 tsp sweet chilli powder, 1/4tsp cumin, 1/4 tomato powder , 1/4 corriander to a bowl and add dry cous cous. 

Cover with boiling water and then put a plate over the top. Leave for 5 mins.

Stir the veg and make sure it's golden all over, then uncover the cous cous and mix in together.
